Tomato Salad with Mint

Deep red, fragrant tomatoes with fresh mint and a pomegranate dressing – this is my summery alternative to classic tomato salad. The tomato salad with mint is ready in just 5 minutes. It shines as a side dish at a barbecue or on the buffet. But with fresh baguette, it also tastes great as a little snack in between meals.

  • Halve 1 shallot and cut it into thin rings.

Tips

  • As almost always, the quality of the ingredients is the secret. You simply can’t make a delicious salad from watery tomatoes and soapy-tasting mint. So when shopping, pay attention to the freshness, aroma and ripeness of the ingredients.
  • Storage: Enjoy the salad fresh and keep leftovers in the fridge only until the next day.

Frequently Asked Questions about Tomato Salad with Mint

Which tomatoes are best for tomato salad with mint?

Small, ripe tomatoes with an intense aroma. Unfortunately, watery tomatoes don’t make a delicious salad – so when shopping, pay attention to freshness, aroma and ripeness. More about this in the kitchen ABC under tomatoes.

What is pomegranate molasses?

Pomegranate molasses (also called pomegranate syrup) is reduced pomegranate juice from Middle Eastern cuisine. It tastes fruity, tart and slightly sweet. You can find it at Middle Eastern grocery stores.

Can I make the salad ahead?

It only takes 5 minutes anyway. It’s best to mix the dressing beforehand and only toss it with the salad shortly before serving, so the tomatoes don’t release too much juice.

What does the tomato salad go with?

As a side dish with grilled food, on the buffet or simply with fresh baguette.

How long does tomato salad with mint and pomegranate dressing keep?

The tomato salad tastes best freshly dressed. Cover leftovers, keep them in the fridge and eat them the next day. Take the salad out about 30 minutes ahead so the tomato flavor comes through better.

Can I freeze tomato salad?

No, fresh tomatoes turn mushy and watery when thawed. The mint loses its flavor, too. You can make the dressing ahead, though. In a jar, it keeps for 2–3 days in the fridge.
