Frequently Asked Questions about Pork Tenderloin with Curry Cream Sauce
Can I use reduced-fat cream or crème fraîche?
Better not, since reduced-fat products can curdle in the oven. Full-fat cream and crème fraîche make the sauce nice and creamy.
How spicy is the curry cream sauce?
With mild to medium curry powder, the sauce is fairly mild. Use cayenne pepper and hot mustard to turn up the heat to your taste.
Which side dish works instead of tagliatelle?
Rice or potatoes are great instead of pasta and soak up the sauce well. A green salad adds some freshness.
How should I store pork tenderloin with curry cream sauce?
Let the leftovers cool, then put them in a tightly sealed container. They’ll keep in the fridge for 2 to 3 days. Reheat the meat and sauce slowly in a pot so the tenderloin stays juicy.
Can I freeze pork tenderloin with curry cream sauce?
Yes, that works well. Freeze it in portions in airtight containers, and it will keep for about 3 months. Thaw it overnight in the fridge. If the cream sauce separates a little, stir it well while reheating.
