Frequently Asked Questions about Orange Fennel Salad with Radicchio
How do I segment the oranges properly?
Peel the oranges so that all of the white pith is removed. Then use a sharp knife to cut the segments out between the membranes. Squeeze the juice from the leftover membranes for the vinaigrette.
What if I’m not a big fan of fennel?
Shave the fennel as thinly as possible. That makes its flavor much milder. This way the salad often wins over even fennel skeptics.
What does orange fennel salad go well with?
It’s great with fish, for example the oven-baked sea bream with salsa verde. You can prep the ingredients and the dressing separately. Toss them together just before serving.
Can I make the orange fennel salad ahead?
Yes, cut the ingredients ahead and store them in the fridge, separate from the dressing. In airtight containers they stay fresh for about a day. Toss everything together just before serving. Eat dressed leftovers on the same day.
Can I freeze the orange fennel salad?
No, this salad doesn’t freeze well. Radicchio, fennel and oranges turn mushy. Instead, prep the ingredients and dressing separately so it comes together quickly before serving.
