- Strip the leaves of 1.5 sprigs thyme, 0.5 bunch parsley and 0.5 bunch chives from the stems and chop finely.
- Finely chop 1 clove garlic as well.
- Mash 250 g butter at room temperature with a fork in a bowl and mix in the herbs, the garlic and 1 tsp lemon zest.
- Season with salt and pepper.
- Fill into 2 small mason jars or shape into 2 logs using parchment paper. Refrigerate and enjoy.
Tips
- The fastest way is with a small food processor. First finely chop the herbs and the garlic. Then add the butter in rough pieces along with the lemon zest and blend.
- The herb butter keeps in the fridge for about 1 week.
- When it comes to herbs, you can basically go wild. Rosemary is also really tasty, or go Mediterranean with oregano, marjoram and a little orange zest. A mix of dill, parsley and lemon goes very well with fish. And if you like it hot, you can also add half a chili pepper.
- Use good-quality butter for the herb butter – you really can taste the difference.

Frequently Asked Questions about Herb Butter
Which herbs can I use?
Feel free to get creative. Rosemary is delicious, and oregano, marjoram and orange zest give it a Mediterranean twist. For fish, try dill, parsley and lemon.
How can I make it extra quickly?
Use a small food processor to chop the herbs and garlic first. Then add the butter and lemon zest and blend. If the butter is still too firm, try this trick for softening butter.
What does herb butter go with?
Meat, fish, vegetables or simply bread. It’s especially good with steak and Mediterranean grilled vegetables.
How long does herb butter keep?
Pack the herb butter into clean, tightly sealed jars. That way it keeps in the fridge for about 1 week. Take it out shortly before serving so it’s easier to spread.
Can I freeze herb butter?
Yes, herb butter freezes really well. Roll it into a log in plastic wrap or freeze it in small portions. Well wrapped, it keeps for about 3 months. You can slice off rounds straight from the freezer and use them.
