Baked Zucchini Cheese Bites

Whether as a snack in between, for a party in the evening or for the lunchbox the next day. These zucchini cheese bites are quick and easy to make in the oven and taste great warm & cold. Basically, almost any cheese works for them. In this version I use mountain cheese (Bergkäse), which gives everything a savory flavor. Serve with a yogurt or Schmand dip – tasty & light.

Tips

  • Instead of mountain cheese, you can also use other cheeses, such as cheddar, Gouda or feta.
  • With your choice of spices, you can easily vary the flavor of the zucchini cheese bites. Oregano, marjoram, thyme or even curry powder, for example, go perfectly.
  • Storage: The bites keep in the fridge for 2 to 3 days and can be frozen individually for about 3 months.

Frequently Asked Questions about Zucchini Cheese Bites

Which cheese can I use instead of mountain cheese?

Almost any cheese works, for example cheddar, Gouda or feta. Mountain cheese makes the bites especially savory. With feta, they turn out a bit saltier.

Why do I need to pat the grated zucchini dry?

Zucchini contains a lot of water. If you don’t pat it dry, the mixture gets too soft. Then the bites won’t turn nicely golden brown.

Which other spices and dips go well with them?

Besides oregano, marjoram, thyme or even curry work well. Yogurt or sour cream makes a great dip. The kitchen glossary explains the different types of sour cream.

How do I store the baked zucchini cheese bites?

Keep the bites in an airtight container in the fridge. They keep there for 2 to 3 days. In the oven at 180 °C (350 °F) they crisp up again in a few minutes. They also make a tasty cold snack.

Can I freeze the zucchini cheese bites?

Yes, the bites freeze well. Freeze them individually on a baking sheet, then transfer them to a freezer bag. They keep for about 3 months. Bake them from frozen at 180 °C (350 °F) until hot and crisp.
